“I grew up at Fran’s Bakery and Family Restaurant, where my brothers, sister, and I managed the pizza shop from within. Personally, I also managed the bakery and trained the Trautman’s in the bakery business when my folks sold it to them. I’ve never gone to business school, but I did attend NDSCS for auto body until my father slipped on the ice and shattered his bottom vertebrae. I quit school and came home to manage the bakery. I did very well at it, which surprised my folks a bit. That’s where I got all my training for cutting meat. Every year for the county fair or weddings, we would cut meat for barbecue. It’s about mingling with customers and sharing tidbits on how to prepare cuts and which meat might be best for a specific occasion. It’s the people I love the most. Everybody has something to offer, even if they don’t realize it. Everyone was taught by someone, and that person, over time, perfected their way of transforming a meal or processing it to give it their own flavor with spices, herbs, and one little pinch of this or that, it makes all the difference in the world.”
